Just Exactly What Does the AMM Do?

I understand the AMM measures the "air mass" passing thru the intake tube and sends an electronic signal to the ECU to richen or lean the air fuel mixture. And that it plays an important part on a cold engine start-up approx. until the oxygen sensor & AIC takes over.
However, assume all other "idle hunt" variables are OK and accounted for, IOW, no vacuum leaks, base idle set, TPS set ok, new plugs, wires, FPR ok, good fuel filter. Etc. etc.
On a previous post I mentioned my primary AMM failed suddenly and I've been swapping in spare AMM's with varying results hoping to get back to normal; no "idle hunt" status. The current AMM starts ok in the early morning start-up, but at lunch, I get wild rpm swings and almost stalls.
I adjusted the AMM ohm resistance screw to about 670, which corresponded to a .5-volt reading at the oxy sensor. My question revolves around the various stages of failure a used AMM might be in and what the symptoms are. Also, did I calibrate the AMM correctly using the Oxygen Sensor and digital multimeter? Can anyone fill me in?
