expansion tank in about 3000 miles, that is still a fairly small leak and could be difficult to find just with an overnight pressure check.
Since you drive the car very few miles, it could be that it's just built up condens water in the whole exhaust system.
For an headgasket leak to produce smoke every other coolingfan cycle on/off on an heated up engine, that would indicate a pretty big leak and would probably also come out as a rough cold start symptoms, running on 2 or 3 cylinders at start up.
