Stereo Stolen, Questions about Damage and Repair

A couple days ago I walk out to find someone had cut a "T" in the top of my convertible, popped the door lock and then ravaged my dash to remove my cheap CD player. This was obviously a beginner job as he tore the hell out of the dash facia to get it out. I have some questions about the fix as I did not install the stereo in there and I can't tell what parts might be missing or broken. Looking into the hole that is left, there appears to be a metal "cradle" on the left hand side of the space, but I can't really see how the aftermarket stereo was mounted in the car. He didn't cut the antenna lead, but he did cut two seperate bundles of mostly purple wires coming from the dash. On both of the wires, the original "Saab" connector is still present, but there is no aftermarket harness after that.. Just cut wires. I assume one set it the speaker wires and the other power, etc? How much of a pain is it to replace that dash panel itself? Are the AC controls, side mirror controls, accessory buttons etc fixed into the panel or can I place them in a new dash face? I tested all the heater and accessory controls and everything seems to work fine. The dash is just all broken up with wires hanging out.
I am just going to duct tape the hell out of my top for now, as I don't want to face the cost of replacement. Has anyone had experience with insurance companies replacement of the canvas if you have "comprehensive" coverage? I don't ever drive the vehicle unless the sun is out, and I figure if I get on the fix it up kick down the road I will replace it.
Any information about this would be much appreicated!
