Perhaps in a moderate temperature climate, coupled with moderate driving conditions the higher fan switch would be fine. But, when it's hot outside, you'll want the lowered temps at all times. Excessive heat really does a lot of harm to not only the engine itself, but just about every engine system component - all seals, gaskets, rubber hoses within the engine compartment. Even the power steering, brake and clutch systems are effected. What's a moderate climate? Anywhere it doesn't go past 80 during the summer season. What's moderate driving? Anything that doesn't include long periods of start/stop city highway and street driving conditions where engine temps can increase and/or fluctuate excessively.
I live and drive in a harsh setting - hot in the summer, lots of city driving. Even with both the low temp T-stat and fan switch on my car, the fan only shuttles on periodically. If I'm moving at all the fan will shut off. Perhaps on a very hot day (100+F) and sitting in traffic the fan won't shut off at all. That's fine with me. My goal is to keep the engine coolant temps below 200 at all times. Prior to refitting with the lowered temp fan switch, I'd often watch the coolant temp guage shoot up past 225F before the fan would turn on. I now have to try very hard to get the temp guage past 210.
