Assuming the electrical system has no "preexisting conditions" and that there are no shorted wires or bad components, I would guess that the amp is drawing too much power (classic headlight dimming cause, especially when a sub 'hits'). I've never had a problem running a 480 watt amp, four speakers and a 300 watt sub in my 86 SPG, but then I never really crank it, either.
I'd suggest that your friend install (or better, have a pro install) a capacitor after double-checking that everything is installed correctly, including using low-gauge wire. As for your car, if you have a smallish amp and sub installed by a competent installer, you should be fine. I don't think Saab alternators (OG anyway) are capable of generating a massive amount of juice, but it's definitely enough for a good-sounding system.
