Common problem.
There's a vacuum line that goes from one of the vacuum nipples on the top of the intake manifold to the turbo bypass valve beneath the distributor. Pull that off at the manifold and see if it holds a vacuum. If it doesn't you need to replace the valve.
When you lift off the accelerator, the turbo has enough inertia to keep sending pressurized air into the intake manifold. The turbo bypass valve opens to recirculate pressurized air upstream of the turbo when you close the throttle. If the TBV isn't working to recirculate the pressurized air, a pressure wave bounces back off the closed throttle plate and stalls the turbo (which stalls the engine).
