The thermostat holds coolant in the block to allow the engine to come up to temperature quickly. This is important as the engine is actually machined to allow for the temp at which it will run. Running too cold can actually cause wear to the pistons and cylinders. It will also not allow the oil to reach a temperature where it can boil off any water from condensation which form when the engine cools. Also the thermostat holds coolant in the radiator so it can cool down properly.
