I don't know of any way that having the A/C on would make the C.E. light come on, unless this scenario (far-fetched) could apply:
Perhaps when you have a vacuum leak occuring somewhere in the HVAC control system (as you may already know, the recirculate flap under hood and the dash vent damper flaps use vacuum servo motors to open/close them). If a vacuum leak occurred, it could cause the air/fuel mixture to take on too much air (lean condition), air which wasn't metered as coming into the engine by the AMM (air mass meter). This would cause the mixture to be lean, popping up a lean signal from oxygen sensor in your exhaust, making the fuel injection computer compensate for it, causing C.E. light to come on.
This may be really far-fetched, but I'd try pulling the C.E. light codes or having a shop to do so (cheaper to DIY) for more concrete evidence.
This can be done with a fused, switched jumper wire and some male/female spade terminals. Swedish Wrench website (http://www.swedishwrench.com) and Townsend Imports' site has info on "pulling the codes," or getting the C.E. light to blink in a series of flashes indicating stored computer fault codes. Really helpful in diagnosis.
