Replaced brakes today, question on the rear...

I just replaced my front rotors and front and back pads on my 1988 Saab 900T Convertible. I had a Bentley manual at my side and that's about it. I had very little problem surprisingly. I have never done a brake job before. I found it quite easy with the manual. If I wouldn't have had it I would have figured out the fronts, but never would have found half the screws on the back ones. I found the fronts much easier to work on.
Anyway, everything is good. I just had one hangup. When I did the back pads the manual said to tighten the "piston tightening screw" I don't have the manual infront of me and that's how I remember it. Anyway, it says to tighten it fully and then back off 1/4 to 1/2 turn or something like that. Then it says the rotor should turn freely. Well, it didn't, it was quite tight. So backed off way more than that until they spun freely. Anyway, my braking seems quite good. I'm just a bit worried that the rear brakes aren't biting properly. The other thing that I didn't do was adjust the parking/emergency brake after doing the rear. Basically if I pull the handle all the way up it just barely engages. Not enough to keep the car in place on a steep incline. Apparently I have to take the center console out to adjust it at the lever. I used to have to pull it up pretty far before to get it to engage, but this is considerably more. Do I essentially just need to adjust the parking brake or did I back off on that bolt/screw too far on the rear? I held off on the parking brake adjustment until I had a better idea.
