*Usually* the "+" and "-" go to the battery - the remaining connection (S, sometimes) goes to the component to be monitored. In the case of a voltmeter, that would be the battery. In the case of most other guages (oil pressure, water temp, etc.) that would be the sender. Any gauge you buy *should* come with wiring instructions.
Where the sender itself "plugs in" depends on the manufacturer's design and the type of sender. Most, but not all, will require drilling into something metal and installing a sender. Such is the case with oil temperature, head temperature, and EGT. For an A:F meter, you tap into the black wire coming off the 02 sensor on the exhaust manifold. In the case of water temp, you may be able to use a brass "t" fitting and tap into a radiator hose, threading the sender into third port of the T - obviously, you need just the right T but most guage mfgs will make that part available. For other gauges - like fuel level - you can often select the right gauge to work off the existing signal in the car. For some, like oil pressure, you'll need a T-adapter to thread onto the oil filter housing thus allowing you to connect the gauge's sender and the factory idiot light sender. Of course, if you don't *want* the factory idiot light, you don't need the T, only the appropriately sized sender.
