The hose in the dashboard is the manifold pressure. It will read vacuum when you're idling because the manifold has vacuum when you're idling. You have to open the throttle to see positive pressure in the manifold. If you want to measure pressure UPSTREAM of the throttle body (why?), then you have to run a hose out to that location...
Yes the temperature sensor can only support one gauge at a time. The OEM dashboard gauge is not a really high-impedance load. Didn't your gauge come with its own sender?
