I didn't see what kind of car you have...

On 16valve LH cars the ECU uses the temperature sensor that's in the intake manifold flange between #2 & #3. The sensor in the thermostat housing is ONLY for the gauge. I imagine the 8v engines are the same but I'm not really sure.

Do you think maybe you knocked some other wiring around when you unplugged the sender?

Boost...
When you were doing this, what did the dashboard boost gauge read? If you were revving the engine without load (like in neutral), then I'm not surprised you didn't see any boost. If you don't see boost while actually driving, then we got different issues. My car is non-turbo so other people will have better advice...
