11mm is ok. I've been told that 15 is the service limit. I think the '87 has the older style chain tensioner. If you havn't already, updating it is a common upgrade when messing with the head (or moving the a/c for whatever reason).
The other thought I have is whether you're off a tooth or two on the chain/cam timing. Common culpit of post head work hesitation or poor perf.
Replacing the chain with engine out is the best scenario because you can also replace all the guides. Roll-in's can be done without the head off / engine out, but you can't do the guides. Some say this is fine, while others recommend against it as you are only replacing one of the worn elements.
