The frequency ranges you mention sound like crossover settings. A crossover limits the frequency range delivered to a speaker. Typically you don't want to send anything higher than, say, 200 Hz to a subwoofer. Midranges usually get 200Hz to somewhere around 12kHz and tweeters are above that. I've never heard of a head unit with an option like this but it seems like a reasonable (read: convenient) way of accomplishing this. Convenience usually comes with a price however (lower performance). Do you have a component speaker system? If so these controls make sense. If not they probably won't do anything for you.
I don't know what the wideness setting are for but sometimes the sensation of wideness is achieved with phasing. As I understand it phasing puts channels slightly out of phase with each other so you get a sound like a jet flying overhead and/or a hint of echo (could be wrong though...). The point of this is to achieve what is sometimes described as increased spaciousness with the music. Tough to describe though -- like trying to describe a color to a blind person.
