If I lucked into buying that car, I'd swap in a used engine, have an indie saab shop put in a new shift shaft seal, look at the other transmission seals, and check the differential clearances.
With some searching, you can score some halfway decent used bumpers and turn signal lenses.
I don't know about your driveway/garage conditions, but engine hoists are available at rental places (and you have another SAAB to pick it up and return it). It took me a good morning to pull the engine/transmission out of my parts car alone.
And, because you have another drivable SAAB, you could pull the engine, measure the main and con rod journals and put in correct size bearing shells without having to worry about downtime.
