this seems the only thing u havnt replaced also.. the clutch should not fully engage just of the floor if the pedal has full travel.. if the pedal feels correct.. ie.. has its full range of movement it sounds like the pressure plate is faulty.. fully engageing just off the floor means when right on the floor it isnt fully disengageing which is why u cant get into any gear..
engine mounts might bugger up your gear linkage but the clutch is a self contained unit and cant really be affected by such things..
are u sure u have the driven plate the correct way round as well.. if u mean pressure plate fingers when u say splines are sticking out too far this also fits in with the pressure plate not working.. most of your pedal movement would be simply pushing those two fingers in that stick out too far.. the rest not being enough to properly disengage the driven plate..
your logic seems a bit off beam to me.. the one thing u havnt changed and dont suspect seems the obvious cause to me..
