Evaporating coolant won't harm the pump. Just as long as you keep the level up, you're fine.
Coolant isn't good for you, but I bet the amounts we're talking about are pretty small. A badly weeping heater core will put enough coolant on the windshield that it'll actually fog up and condense. That's a lot. I bet you're nowhere near that level.
It only takes a few molecules of hot coolant to stink - many, many, many times lower than what it'd take to harm you. The nose is an incredibly sensitive chemical sensor - better than all but the best machines. Coolant is toxic, but primarily to small animals and to a lesser extent, children. But the toxic mechanism for animals (cats/dogs) is different than for humans. Short of drinking half a cup of it, you'll be fine.
