Before you "throw" parts at the problem, some questions.
Is the car running hot only in stop and go traffic, or also when cruising at rode speed?
If only in traffic, this may be normal. The temp gauge is not linear.
The temp difference between mid-level and 1/4" below the red is only about10-20 degrees F.
If the temp runs hot at speed, and actually drops when you slow down to a constant 25-30 mph, then it's probably a radiator that has lost it's thermal efficeincy.
If it's hot in all circumstances, try a new t-stat before going any further.
As others have said, fan going on and off in traffic or after parking is normal, shows the fan and fan t-stat are working.
