Depends on a number of things. Access is probably primary. If you could put it on a ramp and use a torch to pop off the old nuts/bolts, would be a piece of cake. Doing it by running up ramps, back and forth, while trying to cut or otherwise loosen many year old nuts can be something else.
I went for the cat-back assembly (from EEuroparts, off ebay for just under $100 delivered). Could not get right access to the nuts/bolts at back of cat. Took off cat from the front pipe, then reassembled. Were I to keep the car for many more years, I'd have used stainless nuts/bolts for reassembly.
Time it should have taken--maybe 30 minutes to an hour. Actual time, several hours split over a couple of days.
And I recall, after doing the last one, I swore never again<g>.
