Rebuilds are easy to do. The master kit comes with more parts than you need so don't worry about leftovers! However, if the master bore has any blemishes, i would put in a new unit because the seals can quickly tear or "not seal" on these pits. I don't think that it's practical to hone the bores with a wheel cylinder hone tool.
i have no experience rebuilding a slave cylinder because I've always replaced the whole unit. It's usally part of the clutch replacement kit and is virtually free when you do the whole job. Since you have to remove the clutch assembly to work on the slave, i'd go ahead and replace the clutch and pressure plate, throw out bearing, shaft seal and crank seal at the same time. All the parts are about $200 from a site sponsor like sobstory. I'd give Jim a call and see what he recommends.
