Yep, 8 valve SAABs are great! I have an '84S and it is my daily driver.
Anyway, the issue could be with the oxygen sensor. It might be old and not "coming online" properly (quickly enough). It must heat up with engine exhaust (16 valve SAABs used electrically heated O2 sensors to get them "online" more quickly) before becoming usable in the .
If this is the case, you might confirm it by checking the O2 sensor voltage. If the O2 sensor is old and worn, it will also not respond to quickly enough to changes in fuel/air mixture (like when you open the throttle from idle to accelerate).

P.S. There are other possibilities, but an O2 sensor check doesn't cost anything (unless you have to buy a digital voltmeter).
