Low temp t-stat with a high temp fan switch will cause wider temp fluctuations at low speed. The t-stat only controls the temp that coolant flows to the radiator. At low speed, the fan stat determines the upper temp limit. A lower temp fan switch will make the guage travel less. If you never have a problem at speed, even on very hot days, and the gauge swings bother you, replace the fan stat. It's possible your radiator is losing it's efficiency, but that usually means high temps at speed in hot weather.
Are both your fans coming on?
By the way, did you use an OEM t-stat, or an aftermarket one???
Because of the 2-stage opening of OEM, I've noticed much less gauge movement than with aftermarket, which is either open or closed.
