Probably a bunch of different things playing havoc at the same time.
Having had a bad pilot bearing, your shifting problems sound like a bad pilot bearing or an incompletely disengaging clutch. On mine and on most of the ones I've seen at pick-n-pulls, the bearing is hard to turn by hand.
Mine made a screech when the clutch was almost completely disengaged - that's why I tore it apart and found the bad pilot bearing. It's entirely possible that the bearing wasn't changed with the rest of the clutch work.
The stopping like the parking brake was engaged sounds ominous. The clutch wouldn't do anything like that on it's own. You may want to have somebody pull the cover off the differential end of the transmission and see how much play there is in the ring gear and pinion gear and (*shudder*) see if there are any chunks of anything in there.
The asbestos burning smell that you describe makes it sound like the throwout bearing, slave cylinder, and/or pressure plate have failed.
And I also think that gmcb is right about the harmonic balancer - it's probably just about bought the farm.
