Even my 13 year old 900 has a good smell to it still. It's certainly changed from the way it smelled when knew, but in the words of Geddy Lee from the band RUSH, it smells like "Well weathered leather, hot metal and oil" (taken from "Red Barchetta" in the Moving pictures album)
I remember when my Father bought an Olds Cutlass back in the seventies. He got vinyl seats in the back, and cloth velour in the front. The car had lots of plastic not just on the seats but on the doors, dash, and covering just about everything, and smelled it like a new record album. In the words of my sister it smelled like "A new shower curtain". I imagine the content of plastic in new cars gives them this type of smell too. The classic 900 SAAB's had a lot of leather, real rubber, and more natural materials in them than lesser priced cars. One vehicle I remember stepping into and absloutely enjoying the smell was an old Mercedes-Benz sedan my neighbor has. That car smells like fine furniture! I imagine this is from the woods and stuff used as trim inside.
