Sounds like what happened to me and my 85 SPG. It turned out my ECU, the Jetronic box by the passenger's foot well, became fried at some point. It did as you said, for a couple minutes after startup it would seem fine, then drop to like 200 rpm and I had to jiggle the throttle for 5 seconds to keep it running. If you can get your hands on a used one from eBay or here, put in a known good one and see if it helps.
They always tell you it's usually not the computer that goes bad, so I changed everything else first. I learned the expensive way, since a used Jetronic box is usually one of the cheaper parts to replace!
