Head gasket install questions

First off, car in question is an 88 900T.
After pulling the head the gasket actually looks really good, I can't see any real obvious breaks in it. Although 3 pistons are carboned up like you'd expect after 200k and #3 looks very clean. I assume this is from the anti-freeze being boiled off. Is this fairly normal?
Second question... I've been following the Townsend instructions and he says to pull the turbo and manifold with the head. Personally I though this wis a real PITA, especially doing it by yourself. How do you other turbo guys put the head back on? With or with out the manifold or turbo?
