DON'T use straight 30 weight oil in the transmission. It's way too thick. The transmission is designed for 10W30.
Does the clutch start to disengage when the pedal is near the top of the travel? If it doesn't, bleed the clutch hydraulics again, because you still have some air in the system and the clutch won't fully disengage.
It's possible that the pilot bearing chose this time to get a little tough to turn. I've seen a good number of pilot bearings that can't be turned by hand. If the bearing is in that condition, it will transmit a decent amount of torque through the primary shaft with the clutch disengaged and cause reverse grinding.
If you don't do it already, make it a habit to put the shifter in a forward gear (with the clutch pedal in, of course) before you shift into reverse. That will stop the transmission internals and make it easier to put it in the non-synchronized reverse.
