I would actually be quite careful, since its an expensive item, in what you use and certainly would not spray the roof with the detergent when in a car wash.
I think the best strtategy is to keep it simple - wash with water and keep waterproofed (something like scotchguard a couple of times a year) which will help keep it both clean and free of stains. The Owners handbook gives quite good guidance. If I recall use soft soap and warm water if required - although I would be tempted to use water alone if there was no serious dirt.
For a really deep clean you can buy convertible top soap which normally requires a scrub as well. In these circumstances you will need to waterproof afterwards.
