Welcome to the Classic 900 world. I have had a 900 of some sort since 1986. The problems you describe for the central locking system sounds like you have a bad wire or contact somewhere that is grounding thus causing the fuse to short. Get a Bentley manual from Amazon (see link below) or some other source so you can follow the wire and look for a cut.
As far as the SRS and a new steering wheel, I just went through that with my '92 convertible. The SRS problem can be solved simply by removing the bulb which is accessed through the speaker grill on the left side of the dash. This does ot fix it , but the light will stop bothering you. If you are going to remove the airbag wheel and replace it with a non airbag wheel, you will have to change the steering column to a non airbag one, (pre '89). I installed a Momo Millenium wheel and I really like the feel of it. http://www.momo.com .
