If the engine seems to have no idea what to do when you press the gas pedal, I suspect the AMM. It measures the airflow and sets the fuel. If the AMM is bad, it can't measure airflow, so the engine control can't set the fuel. So when you press the gas pedal, you run the engine lean and it quits.

A visual check of the AMM wire is nice, but that's not usually what fails. And the burn-off test only check to see if the burn-off feature works. There is circuitry inside the AMM to convert the information from the hot wire to voltage for the engine control. The most common fault is corrosion on the circuit board causing the AMM to read wrong. You won't see that by looking at the wire. About the best you can do is try and find a known-good AMM and plug it in. Make sure it's the same Part Number - older AMMs will fit and look similar, but won't work.
