The foam insulation under the carpet will take forever to dry out.
Here's a trick. Remove the sill plate and the molding on the front edge. Now you the carpet away from the floor and from under the pedals. There are cutouts around the seat mount so you can lift it up. The get a case cutter and cut the rubber insulation along the center console line so you can pull out a "floor mat" sized piece. The you can dry this out near a source of heat. In a warm house it will take several days.
Put your lab pads under the carpet to get the remaining moisture. The carpet itself will dry out quickly and you can drive the car without the insulation until it is dry.
Have fun tracking down the leaks...aarrrgh. Clear sunroof drains, and make sure rear window seal is stretched so it doesn't pull away from the frame. Then look for front leaks: air intake drain hose(if pass side wet), steering column boot, shifter boot, various firewall grommets, main harness seals next to fuse box through bulkhead, windshield gasket. Lastly look for pinhole rust through leaks in the floor itself.
