On n/a engines too large of an exhaust system can lower the velocity of exhaust gasses leaving the engine. High exhaust gas velocity can be very helpful and at certian RPM ranges the flow of exhaust can carry momentum and in between exhaust pulses can actually create a slight vaccum and assist with the withdrawl of exhaust from the engine. The exhaust can be tuned for this optimization to occur at different RPM ranges, much the same way as an intake system can be optimized for certian RPM ranges.
an overly large exhaust will diminish this effect to almost nothing.
On a turbo car:
The turbo negates this effect and the only thing that matters is getting exhaust in and out of the turbo as fast as possible.
Your car probably was not faster because you still had the same maximum boost pressure, but I would think that the turbo would spool up faster and give you slightly quicker response. Maybe of you replaced the cat with through pipe you'd have more noticable results.
I'm not an expert on this matter, but I thought I'd share.
