Need advice on bodywork/insurance claim in NY

Yup. I get my '88 900T finally running pretty nicely for ONE FREAKIN WINTER and some ditz T-bones me on her way out of a parking lot. Fortunately my car still drives fine and the accident report states unequivocally that she is exclusively at fault, but there's a pretty big dent in my body now taking up all the space between the passenger door (which also still works perfectly) and the rear wheel well. Now her insurance company is on me to let them recommend a local body shop ASAP, or send an adjuster out to evaluate the damage, etc. and I just don't want to rush anything here before considering all options and their various advantages, particularly considering that I have Yet to deal with any local mechanics who don't seem completely Saab-clueless, at least by Saabnet standards. I'm waaay up in the northern Adirondacks, NY and mostly I see meatheads hammering on domestic pickup trucks, the sorta guys who told me my FRAME was totally unsalvageable when I broke a lower control arm. Yeah, they did. That's why nobody touches my car mechanically but Me anymore, but bodywork is well beyond both my ability and interest.

SO: Let's have a big conversation on the state of the art of C900 bodywork and insurance claims, can we? I really need help here, because I Hate both.
I think I may take the car by a Very qualified guy in VT and have him check to see that nothing on the rear suspension is bent, but what can I hope for in terms of a complete, quality repair? Is there a way to cut and weld in a replacement body panel, or does it just get pulled out and filled with Bondo, and how does that eventually look and last?
If there's a successful technique out there for replacement with original metal and a technician anywhere in the Northeast who does it then I'm prepared to insist upon that and a new paint job (could I push that as far as a full-body repaint?) OTOH, you tell me, if repairs of this sort consistently come out like crap then I might as well just push for maximum cash damages (advice welcome here as well), keep driving the car as my Official Winter beater, and start shopping now for the completely intact body upon which to base my ultimate C900 project.
I should post a picture of the damage, shouldn't I? I'll try to borrow a friend's digicam this evening.
