I just rebuilt a lot of my ride (headgasket, timing chain, 5spd conversion, etc.) and this was the easiest part of the job:
1) have a Saab-familiar shop professionally resurface the head. while its all apart, get new valve guides and surfaces if needed. This way your topside compression is well-tweaked and you don't have to remove the valves yourself, which can be a day's project each way. Ask me how I know. Well worth the extra money in both time and resulting performance.
2) get the gasket KIT from eEuroparts. You'll be tearing thru the intake/exhaust and assorted other gaskets to get the head off, gaskets which are certain NOT to come off in one piece. On reassembly I've heard it's nice to dab just a little 518 under the headgasket right where the timing cover meets the block, but other than that it goes on dry. Torque will sort everything else out.
Not too much trouble to DIY, but waaaaay too much trouble not to just Do It Right. Oh yeah, wouldn't hurt to check the timing chain tensioner for chain stretch while you're in there.
But FWIW my car is a completely different (friskier) animal now.
