Good to hear that you solved the over-rich condition. One way to check to see if the O2 sensor is functioning is to use VTVM (Vacuum Tube VoltMeter - a device for the well-heeled technoids among us) or a decent digital multitester.
Peel back the rubber cover on the lead that connects the O2 sensor signal to the wiring harness, but don't unplug it. Put one probe from the tester on the spade lug and ground the other. You should see an alternation between 0.2 VDC and 0.8 VDC every second or so. With cheapie testers, you probably won't get enough time resolution to see it clearly, but you'll see values above and below 0.5 VDC.
The alternation is result of ECU emissions-control programming to provide slightly lean/slightly rich mixtures for the catalytic converter to work properly.
When you take the O2 sensor out of the control loop, the ECU will go into Open-Loop mode because it doesn't have that feedback, and not do the alternations.
Have you changed your vacuum hoses, replaced the rubber vacuum nipple bushings, cleaned the throttle body, and cleaned out the AIC valve?
