I've had good luck with the 518. It's good to a decently high temperature (300F). You won't go wrong with a silicone sealant - neither one is wrong.
I apply a layer of sealant on the head. Bentley says to put it on about three-quarters of the head. I do the whole head. No need for a huge amount, just a thin continuous bead.
I also put a thin bead of sealant on the valve cover, and use that to stick the gasket to it. Just press it on with your fingers. Just enough to hold it in place as you flip the valve cover over. Look in each hole to make sure that the gasket holes have lined up, and that the gasket hasn't shifted.
Can you put the gasket on the head first? Sure - does the same thing. But I like a layer of goop on both sides of the gasket. Oil doesn't ignore one side of the gasket.
Remember, only torque the bolts to 11 ft-lbs (assuming a 16 valve engine)
