When you have gotten that far down into the clutch area and managed to depress and secure the pressure plate, it is a no brainer to loosen the bolts and pull the whole clutch assembly out with the slave.
Meaning, you pretty much has to be a better mechanic to pull only the slave compared to extract the whole clutch.
And no, the slave cylinder is not suppose to be able to come out by it's own but some people have managed to pull it out when all the stars are lined up perfectly in the sky.
Did the Saab master tech give you a break in the clutch price by using a non Saab slave cylinder, or did you pay full price and he still used a non Saab slave? I know it is hard to prove but non Saab slave cylinders are known to fail early and the mechanic should know bettter to not even consider installing one.
If he infact used a Saab oem slave it might be something else that contaminated the cylinder (like a failing clutch hose) and that led to an early failure of the cylinder.
A good Saab mechanic will be able to tell when the cylinder is out if it is an original part or an after market.
