There are a few possibilities, like low freon levels, flaky pressure switches, or the freeze switch. But for cheap and easy, go for the A/C relay in the relay panel.
Get yourself some spray-on contact cleaner (Radio Shack, autoparts stores), and pop the relay out. Spray the socket with cleaner and let it dry while you pop the cover off the relay. Clean the relay contacts with some fine (400 grit) sandpaper. Just knock the black crud off - don't polish the plating off. Give the contacts a squirt or so, and let them dry. Polish up the relay leads with the sandpaper or some Scotchbrite - again, just shiny, leave the plating on. When everything has dried, put it back together.
Every time the A/C relay opens, there is a spark on the relay contacts. That builds up carbon, which acts as a resistor. The resistance gets worse at higher temperatures. So as the A/C runs, the current causes the contacts to heat up, and eventually the resistance is so high that the clutch won't pull in. When everything cools down, it works again.
It's worth a try - cheap and easy.
