Help! Car stolen, need to determine value

My much loved '89 900 was recently stolen (see post from earlier last week)

So now I'm working with my insurance company to determine value, and am not satisfied with thier offer. In hopes of improving the offer, I'm wondering what other Saab lovers would estimate for value on the car taking into consideration repairs made and condition. They've offered $2000, but I think it's worth more...
1989 Saab 900 3 door
120,000 miles
Exterior in good shape, no dents. Small dent in chrome trim on drivers door. Some chips and a scratch on hood (filled in w/ touchup paint)
All glass in good shape, no cracks.
Car has AC, Cruise, Diamond audio speakers, Kenwood CD/MP3 player
Fully rebuilt transmission and clutch at 109,000 miles (warranty for 50000 miles)
New brakes, alloy wheels, replaced timing chain and main pulley
Interior in nearly perfect shape, cloth seats, no rips/tears/stains. Headliner is clean and not sagging, no stains
Any input is much appreciated!
