I have taken similar measures after my '88 ran hot for way too long. Last winter, the car had trouble developing heat in northern NY winters, so I'm going to replace the thermostat with the standard value- she's my winter car now.
As long as your radiator is not leaking, the thermostat regulates temperature and the cooling fan thermoswitch regulates how hot it can get. I've experienced two thermoswitch failures on two cars lately, so I say they last 10-12 years tops. Both failed the same way- they would wait too long to close and switch on the cooling fans.
What I plan to do with my '92 convertible (same scenario, summer car) is to get rid of the heater bypass valve, put in the standard value thermostat and the cooler value thermoswitch. I haven't done the twin-fan update yet, but I have removed my AC (it's a convertible, folks...) so the AC button serves to turn on the second fan whenever I wish.
Running without a thermostat is like running with a thermostat stuck open. You will have no heat, your engine will never reach normal operating temperature (killing fuel mileage) and you may put fault codes in the engine management system enough to light up the check engine light. I forget which code specifically, but excessive cold running from a stuck-thermostat car would eventually overwhelm the adaptives.
So, I recommend you leave the thermoswitch at the lower value (protecting the engine from overheating) and swap back to a standard (87 C?) thermostat so you will get some semblance of heat and you're not relying on the seat heaters.
