No AC- Nice!
I suspect your idle "valve" (actually a bi-metallic spring setup) may be stuck too far closed to allow the engine to idle. It's in your picture between the front engine lifting ring and the thermostat housing. It has two rubber air hoses and an electrical connector going to it.
Remove one of the hoses, spray some penetrating oil in the valve, reseat the hose, and see if you can get it freed up. This usually sticks too far closed and forces the engine to a very, very low idle speed. Also see the other 8 valve threads on the BB for my full procedure.
Can you post photos of the idle valve rubber hoses for a car without AC? I've always wanted to get rid of the AC valve on my car, where I ripped out the system long ago.
