Find another stereo shop...I've installed Blaupunkt and Alpine radios in Saabs no problem. Easy to do!!
As for the long screw, chances are it will screw back in, I've never stripped one although I guess you could. Usually the long tubes behind the fascia that locate the screws and guide them to the top threaded hole come loose. You might have to fish around and feel for the threaded hole.
Long term fix is to remove the fascia and hot glue a tube (preferably the stock one) or even a paper or plastic straw approx the right size to the guide bar/notch so that the screws will guide to their proper holes.
A new dash is about $1400 installed by dealer if the dash is available...don't go there.
I bought a used dash on ebay for $100 with negligible cracks in it. Takes a few hours or a day to change one out and it's good practice but tedious. New dash will have good threads or you can repair the threads in an old dash with a helicoil or maybe a nutsert and epoxy/fiberglas.
I don't think you need to have a machine shop make you one...the screws are probably still available from Saab if you have lost it.
