If you don't smell gas, especially after the car's been sitting, it's a good sign that everything fuel-tank-and-line-related is doing okay. Since '87 Ses are 16 valve, how young is your fuel pressure regulator? When that degrades it gets pretty rich in a hurry. I may not be interpreting what happens with your gauge right, but if one of the wires is slowly short-circuiting to ground it will play games with the fuel gauge. When you say "it goes through gas more quickly" do you notice any lack of performance or starting issues or oil consumption? That and a compression test will give you a decent impression of how the valve seals, seats, and piston rings are holding up. Also, some fuel injector cleaner and a good Italian tune-up will clean out deposits from the valve seats and in the squish area. Don't forget about vacuum leaks and the importance of a clean throttle bore, as well as wheel bearings and non-sticky brakes on how well you roll. There's a bit of material to work on, get back to us when you narrow it down a bit.
