Hey B,
The only time that happened to me was when a few diodes in my alternator were bad. Depending on your alternator, I think there may be 9 or more diodes. When one or two go, it seems that an rpm tweak is needed to turn out the light. Just like you, the issue was most prevalent after the car sat for a few days.
I had an OEM alternator do that and I pulled it apart and found a couple of fried diodes. I just put it back together and ran it for at least a year until it completely failed and replaced with a rebuilt chainstore unit which exhibited the same symptoms from the get go. I assumed that they hadn't tested all the diodes during rebuild and just cleaned it up and put in a new regulator and/or bearings.
I bought a Bosch back up alternator to "keep in stock" assuming eventual total failure. Never happened and I ended up putting the new alternator in another car.
There may be other causes, like regulator, connector corrosion. The light goes out when the alternator voltage at least equals the battery voltage, so I think your battery is OK.
