stripped piston adjustment screw - now what?

I've already encountered a big problem with my 1st rear brake job ('94 convertible) and could use some advice!
It seems whoever did the last job back there either really over-torqued everything, or didn't lube right; the piston adjustment screw will not budge, and in addition the head is so stripped I doubt I can get it out anyway. The guide pin bolts are also frozen, despite a lot of penetrating oil. Hoping to get those off eventually, though.
So it looks like I might need a couple of rebuilt calipers - but how do I get off the old ones without being able to get the piston adjustment screw to budge? Does anyone have any tricks for a stripped screw like this?
