The temperature sender used by the ECU isn't the same as used by the gauge.I'd also have to think if a '86 8V (non-turbo) has a cold-start valve. I think it does - that adds fuel for about 30 seconds on a cold start. You may also have an AMM issue, where the AMM isn't working well until it gets a chance to warm up.
I'd make sure I started the engine with the A/C OFF. The A/C holds off a few seconds after the engine starts - but that kicking in could be causing your issue. The engine should try and up the idle with the A/C on, but that might not be happening.
My first assumption would be the IAC (idle air controller) - that sets the idle speed. A bad/leaky fuel pressure regulator (FPR) could also cause such problems. And make sure that you've hunted down all vacuum leaks - that will cause a bad idle, especially when cold.
The turning the key to ON before starting is to allow the fuel pump to get up some fuel pressure before starting. It has nothing to do with the engine not turning over (a starter-type issue)
