Are you Scrapping for spares for you or to sell the the rest of us? If for you, is your other car the same year? If so then i'd take all of the electronics like you said. I'd also take the throttle body, the knock sensor, the AMM, fuel injectors, all of the electronics in the left front fender area, the electronics in the passengers kick panel, the electronics under the rear seat, FPR, Distributor with wires, and if the radiator is newer take the radiator too. Also consider taking the entire instrument cluster too. If you have cruise control take the turn signal unit with the cruise switch. Window lift switch pack, the one between the seats. The tool kit from the trunk if complete/good shape. If you have another Saab, how is the spare on this one compared to the other? Radio antenna, complete - access in the inside panel on the fender well plus take the nut and gromet/fitting from the outside on the fender.
these are the small, sometimes expensive, needs to work (and yours already do..) items that you may need at some point in the future.
I'm sure I missed something, but this is a first pass.
