Draining the coolant and refilling it is no big deal. Be sure to bleed the air out of the system when refilling. The Bentley service manual will help you out a great deal.
Coolant is a solution of antifreeze and water. Straight water will boil too easily and not protect the aluminum bits (like your cylinder head) from corrosion. Straight coolant is also a bad idea.
If your car is leaking coolant that much, an overheaded engine with a blown head gasket as a result is going to be a lot more expensive than coolant. While I'm not trying to scare you, sometimes you have to draw the line on when the car is reliable or not.
Remove the AC compressor to change those hoses, I think, because my '92 doesn't have the AC stuff in it anymore and it's front and center.
