First, what year/engine do you have? That helps a bit.
There are two fans - nominally one for the radiator, the other related to the AC.
The 900 doesn't have a fan resistor. There is a coolant temperature switch (thermoswitch), and I suspect that's what you're looking at. If the radiator temperature gets high enough, the switch closes and the radiator fan turns on. There is also the AC fan - any time the AC compressor is engaged, that fan also turns on.
The fan thermoswitch typically comes in either a 82 or 89 degrees C version. I think 89 is stock.
The AC button turns the compressor on and off, and also turns the AC fan on and off. So it doesn't override the thermoswitch as much as supplement it.
The fans have fuses, so I'd check those. There is also a time delay relay (depending on year) that allows the fans to run for a few minutes after the car has shut off. If that relay is shot, the fans won't come on.
