This is all excellent info - especially about the weights involved!
I will say that when doing this mod on a 1990+ car, the added piston volume doesn't much affect brake pedal travel since the ABS system is isolating you somewhat from the mechanicals. While I noticed it on my '87 SPG (fitting with '88+ axles and 9000 calipers), it's never been a problem on my 1990 SPG. Additionally, I did not feel it got in the way on our LeMons car at all. I got used to it pretty quickly.
Secondly, the added selection in brake pads is a nice side effect of this upgrade. Being able to select from E30 M3 pads give you a lot of choice, which may be worth it.
The Scanwest kit (what Damien S. runs) is an amazing bit of kit, but at damn near $2000 you gotta REALLY want more braking power. I find the 9000 setup gives you a little extra without a huge weight penalty (5lbs per corner, according to the above info) and virtually no cost (Autozone sells rebuilt 9000 calipers for $100 per pair).
I've been looking for a nice middle ground, but really don't have the fabrication skills or facilities available to do it. Adapting something like the 4-piston aluminum calipers from a RX7 TII or the 2-piston ones from 2000+ Mustang GT would make for a very cheap upgrade with real-world weight and braking power benefits, but someone's gotta make an adapter, and that's beyond my capability... :)
